Ingredients:

  • 1 sheet of store-bought puff pastry, thawed but still cold
  • Granulated sugar (plenty!)
  • Optional: Cinnamon, or other spices.

Instructions:

  1. Prepare Your Work Surface:
    • Generously sprinkle granulated sugar onto a clean, flat work surface.
  2. Prepare the Puff Pastry:
    • Unfold the puff pastry sheet onto the sugared surface.
    • Sprinkle more granulated sugar evenly over the top of the puff pastry. You want a good amount of sugar, as this is what will caramelize and create the palmier’s signature crispness.
    • If you would like to add cinnamon, or other spices, this is the time to sprinkle them over the sugared puff pastry.
  3. Shape the Palmiers:
    • Begin rolling both long sides of the puff pastry sheet inwards, towards the center.
    • Roll each side tightly and evenly, until the two rolls meet in the middle.
    • Press the two rolls together gently to seal.
    • You should now have a double roll.
  4. Chill the Dough:
    • Wrap the rolled-up dough in plastic wrap and chill it in the refrigerator or freezer for at least 30 minutes. This will make it easier to slice.
  5. Slice and Prepare for Baking:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
    • Remove the chilled dough from the refrigerator and slice it into ½-inch thick slices.
    • Place the slices onto the prepared baking sheet, leaving some space between them, as they will spread.
    • If necessary, reshape the palmiers after placing them on the baking sheet.
  6. Bake:
    • Bake for 10-15 minutes, or until golden brown.
    • Flip the palmiers halfway through baking to ensure even browning and caramelization.
    • Watch them closely, as they can burn easily.
  7. Cool and Serve:
    • Remove the palmiers from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  • Even Caramelization: Ensure an even coating of sugar on both sides of the puff pastry for consistent caramelization.
  • Chill Time: Don’t skip the chilling step! It’s crucial for clean slices and preventing the palmiers from losing their shape.
  • Savory Palmiers: For a savory twist, use grated Parmesan cheese, pesto, or other savory ingredients instead of sugar.
  • Spice Variations: Experiment with spices like nutmeg, cardamom, or even a pinch of cayenne pepper for a unique flavor.
